Ingredients
  

Omelette Base
  • 2 eggs beaten
  • 1 tbsp heavy cream
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Filling
  • 1/2 cup spinach fresh, chopped
  • 1/4 cup mushrooms sliced
  • 1/4 cup cheddar cheese shredded
  • 1 tsp olive oil for sautéing

Method
 

  1. Heat olive oil in a non-stick pan over medium heat. Sauté mushrooms for 3-4 minutes until soft.
  2. Add spinach and cook for 1-2 minutes until wilted. Remove from pan and set aside.
  3. In a bowl, whisk together eggs, heavy cream, salt, and pepper.
  4. Pour egg mixture into the same pan, cook over medium heat until mostly set.
  5. Place sautéed spinach, mushrooms, and cheese on one half of the omelette. Fold the omelette over to form a wrap.
  6. Cook for another 1-2 minutes until cheese melts and serve hot.

Notes

You can add avocado slices or bacon for extra flavor. For a spicier kick, sprinkle some chili flakes inside the wrap.
