Ingredients
  

Chicken and Marinade
  • 1 1/2 lbs chicken breast cut into cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh oregano chopped
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

  1. In a mixing bowl, whisk together olive oil, lemon juice, garlic, parsley, oregano, salt, and black pepper.
  2. Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.
  3. Thread marinated chicken onto skewers.
  4. Preheat grill or grill pan to medium-high heat. Grill skewers for 12–15 minutes, turning occasionally, until chicken is cooked through.
  5. Serve hot with lemon wedges on the side.
