Mug Cake Base
  • 3 tbsp almond flour
  • 1 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1 egg large
  • 2 tbsp unsweetened almond milk
  • 1 tbsp butter melted
  • 1 1/2 tbsp erythritol or keto sweetener
Cinnamon Swirl
  • 1 tsp cinnamon
  • 1 tsp erythritol or keto sweetener

Method
 

  1. In a microwave-safe mug, combine almond flour, coconut flour, baking powder, egg, almond milk, melted butter, and sweetener. Mix well until smooth.
  2. In a small bowl, mix cinnamon and sweetener for the swirl.
  3. Drop cinnamon mixture into the mug batter and swirl gently with a knife or toothpick.
  4. Microwave for 90 seconds to 2 minutes, until set. Let cool slightly before eating.
