- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together butter and sweetener until light and fluffy.
- Beat in eggs and vanilla extract until well combined.
- Stir in coconut flour and baking powder until a dough forms. Fold in chocolate chips.
- Scoop dough onto prepared baking sheet, flattening slightly. Bake for 10–12 minutes, until edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
Coconut flour absorbs liquid quickly, so don’t add extra unless the dough feels too wet. For extra flavor, sprinkle with sea salt before baking.
