Zucchini Boats
  • 2 large zucchinis halved lengthwise and hollowed out
  • 1 tbsp olive oil
Filling
  • 1/2 lb ground turkey
  • 1/2 cup diced onion
  • 1 clove garlic minced
  • 1/2 cup diced tomato
  • 1/2 cup shredded mozzarella cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. Brush zucchini halves with olive oil and place them cut-side up in the dish.
  3. In a skillet over medium heat, cook ground turkey until browned. Add onion and garlic and cook until softened.
  4. Stir in diced tomatoes, salt, pepper, and Italian seasoning. Cook for 2–3 minutes until well combined.
  5. Spoon the turkey mixture into the zucchini boats. Top with shredded mozzarella.
  6. Bake for 20–25 minutes, until zucchini is tender and cheese is melted and bubbly.
  7. Garnish with chopped parsley before serving.

Notes

For added flavor, mix a spoonful of marinara sauce or pesto into the turkey filling before baking. You can also substitute ground turkey with chicken or beef.
