- Stir in diced tomatoes, salt, pepper, and Italian seasoning. Cook for 2–3 minutes until well combined.
- Spoon the turkey mixture into the zucchini boats. Top with shredded mozzarella.
- Bake for 20–25 minutes, until zucchini is tender and cheese is melted and bubbly.
- Garnish with chopped parsley before serving.
Notes
For added flavor, mix a spoonful of marinara sauce or pesto into the turkey filling before baking. You can also substitute ground turkey with chicken or beef.
