  • 1/2 cup coconut oil
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup almond butter smooth or crunchy
  • 3 tbsp powdered erythritol or preferred keto sweetener adjust to taste
  • 1 tsp vanilla extract
Optional Add-ins
  • 1/4 cup chopped almonds for crunch
  • sea salt flakes for topping (optional)

Equipment

  • Microwave-safe bowl or saucepan
  • Spatula
  • 8×8 inch baking pan

Method
 

  1. Line an 8×8 inch pan with parchment paper and set aside.
  2. In a microwave-safe bowl or small saucepan, melt coconut oil and almond butter together over low heat until smooth.
  3. Stir in cocoa powder, erythritol, and vanilla extract until fully combined and creamy.
  4. Fold in chopped almonds if using, then pour the mixture into the prepared pan and smooth the top.
  5. Sprinkle with sea salt flakes if desired, then refrigerate or freeze for at least 1 hour until firm.
  6. Cut into squares and store in the refrigerator for up to 2 weeks.

Notes

For a nut-free version, use sunflower seed butter instead of almond butter. To make it extra indulgent, drizzle melted sugar-free chocolate over the top before chilling.
