Ingredients
  

Cookie Dough
  • 1/2 cup butter softened
  • 1/2 cup erythritol or keto sweetener
  • 2 eggs large
  • 1/2 tsp vanilla extract
  • 1/2 cup coconut flour sifted
  • 1/4 tsp baking powder
  • 1/3 cup sugar-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together butter and sweetener until light and fluffy.
  3. Beat in eggs and vanilla extract until well combined.
  4. Stir in coconut flour and baking powder until a dough forms. Fold in chocolate chips.
  5. Scoop dough onto prepared baking sheet, flattening slightly. Bake for 10–12 minutes, until edges are golden brown.
  6. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a rack.

Notes

Coconut flour absorbs liquid quickly, so don’t add extra unless the dough feels too wet. For extra flavor, sprinkle with sea salt before baking.
