Ingredients
  

Soup Base
  • 4 cups broccoli florets fresh or frozen
  • 2 tbsp butter unsalted
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 cups chicken broth or vegetable broth
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

  1. In a large pot, melt butter over medium heat. Add onion and garlic, cooking until softened.
  2. Add broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes until broccoli is tender.
  3. Use an immersion blender to puree part of the soup for a creamier texture, leaving some broccoli pieces intact if desired.
  4. Stir in heavy cream and shredded cheddar cheese. Mix until cheese is melted and soup is smooth.
  5. Season with salt and pepper to taste. Serve hot, garnished with extra cheddar if desired.
