- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- In a mixing bowl, whisk together almond flour, coconut flour, and baking powder.
- In another bowl, beat the eggs, almond milk, peanut butter, sweetener, and vanilla until smooth.
- Combine wet and dry ingredients to form a thick batter.
- Scoop batter evenly into mini muffin tin, filling each about 2/3 full.
- Bake 12–15 minutes, until golden and set. Let cool before removing from tin.
Notes
These bites store well in the fridge for up to 5 days or in the freezer for up to 1 month. Delicious with sugar-free syrup or a drizzle of extra peanut butter!
