Ingredients
  

Zucchini Fries
  • 2 medium zucchini cut into fry-shaped sticks
  • 1 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 large eggs beaten
Dipping Sauce
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk eggs. In another, mix Parmesan, almond flour, garlic powder, and Italian seasoning.
  3. Dip zucchini sticks into egg, then coat with Parmesan mixture. Place on prepared baking sheet.
  4. Bake for 18–20 minutes, flipping halfway, until golden and crispy.
  5. Meanwhile, prepare dipping sauce by mixing mayonnaise, lemon juice, and minced garlic in a small bowl.
  6. Serve zucchini fries hot with dipping sauce.

Notes

For extra crispiness, place fries under the broiler for the last 2 minutes of baking. They’re also delicious with a marinara dipping sauce.
