Raw Sugar Free Nut Bars

50g butter
20g coconut oil
75g mixed nuts (almonds, walnuts, hazlenuts pecan nuts)
75g seeds
1tsp peanut butter
2tsp walnut butter
50g dark chocolate (80%)
25g shredded coconut
If required add in sweetener to your taste


In a food processor, blitz together the nuts, seeds and chocolate. Next pulse in the walnut and peanut butter until it is evenly combined. Blitz in the butter and coconut mixture, as well as the shredded coconut and pulse together. Remove the mixture from the processor and place into a square or rectangle based tin. Place in the freezer for at least half an hour (if you add more oil or butter then you may need to leave it longer). Once firm remove from the freezer and cut into bar shapes. This recipe makes around 6, 30g bars; you can of course cut them to be smaller or larger depending on your nutritional preference. Once cut, store the bars in an air tight container and place in the freezer until you are ready to eat them.
