
Avocado Egg Cloud Boats
A fun and healthy breakfast made by baking eggs in avocado halves, with a light and fluffy texture. Perfect for a low-carb start to your day!

- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Carefully scoop out a little extra avocado flesh to enlarge the cavity for the egg.
- Place avocado halves on the baking sheet and crack one egg into each half.
- Season with salt and pepper.
- Bake for 12-15 minutes until egg whites are set but yolks are still slightly runny.
- Garnish with chopped chives and serve immediately.
Notes
For extra flavor, sprinkle paprika or shredded cheese on top before baking. You can also serve with a side of fresh tomatoes or leafy greens.
