Ingredients
  

Avocado Egg Boats
  • 1 ripe avocado halved and pit removed
  • 2 eggs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped chives optional, for garnish

Method
 

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Carefully scoop out a little extra avocado flesh to enlarge the cavity for the egg.
  3. Place avocado halves on the baking sheet and crack one egg into each half.
  4. Season with salt and pepper.
  5. Bake for 12-15 minutes until egg whites are set but yolks are still slightly runny.
  6. Garnish with chopped chives and serve immediately.

Notes

For extra flavor, sprinkle paprika or shredded cheese on top before baking. You can also serve with a side of fresh tomatoes or leafy greens.
