Ingredients
  

Casserole Base
  • 1 lb breakfast sausage ground
  • 10 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the sausage until browned. Drain excess fat.
  3. In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper.
  4. Spread the cooked sausage evenly into the baking dish. Sprinkle with half of the cheddar cheese and all of the mozzarella.
  5. Pour the egg mixture over the sausage and cheese layer. Top with remaining cheddar and chopped green onions.
  6. Bake uncovered for 30–35 minutes, or until the casserole is set in the center and golden on top.
  7. Allow to cool slightly before slicing. Serve warm.
