  • 1 lb asparagus trimmed
  • 8 slices bacon
  • 6 eggs large
  • 1/2 cup heavy cream
  • 1 cup cheddar cheese shredded
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Wrap small bundles of asparagus (3–4 stalks each) with bacon slices.
  3. In a skillet, sear bacon-wrapped asparagus for 2–3 minutes until partially cooked. Transfer to the baking dish.
  4. In a bowl, whisk eggs, heavy cream, salt, and pepper until well combined.
  5. Pour egg mixture over bacon-wrapped asparagus and top with shredded cheddar cheese.
  6. Bake for 25–30 minutes, until eggs are set and top is golden brown.
  7. Let cool slightly before slicing and serving.

Notes

This dish can be made ahead of time and reheated for a quick breakfast or brunch. Try swapping cheddar for mozzarella or gouda for variety.
