
Eggplant Pizza Slices
Low-carb, cheesy mini pizzas made with roasted eggplant slices as the crust — a quick and healthy alternative to traditional pizza.

- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange eggplant slices on the baking sheet. Brush with olive oil and season with salt and pepper.
- Bake for 12–15 minutes until slightly softened.
- Remove from oven, spread each slice with marinara sauce, sprinkle with mozzarella and Parmesan, and add optional toppings like pepperoni.
- Return to oven for 5–7 minutes, until cheese is melted and bubbly.
- Top with fresh basil before serving.
Notes
For crispier slices, salt the eggplant and let it sit for 15 minutes to draw out moisture before baking.
