Ingredients
  

Base
  • 1 large eggplant cut into 1/2-inch slices
  • 1 tbsp olive oil for brushing
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Toppings
  • 1/2 cup low-carb marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • pepperoni slices optional
  • fresh basil leaves for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange eggplant slices on the baking sheet. Brush with olive oil and season with salt and pepper.
  3. Bake for 12–15 minutes until slightly softened.
  4. Remove from oven, spread each slice with marinara sauce, sprinkle with mozzarella and Parmesan, and add optional toppings like pepperoni.
  5. Return to oven for 5–7 minutes, until cheese is melted and bubbly.
  6. Top with fresh basil before serving.

Notes

For crispier slices, salt the eggplant and let it sit for 15 minutes to draw out moisture before baking.
