  • 1/2 cup chopped broccoli florets fresh or frozen
  • 3/4 cup unsweetened almond milk or heavy cream mix for creamier texture use half cream, half almond milk
  • 1/3 cup shredded sharp cheddar cheese plus extra for topping
  • 1 tbsp cream cheese softened
  • 1/4 tsp garlic powder
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper

Method
 

  1. Add the chopped broccoli and almond milk (or cream mixture) to a microwave-safe mug. Cover loosely and microwave for 2–3 minutes until the broccoli is tender.
  2. Stir in the cream cheese, garlic powder, salt, and pepper until smooth and creamy.
  3. Add the shredded cheddar cheese and stir well. Microwave for another 30–45 seconds, then mix again until fully melted and combined.
