- Add the chopped broccoli and almond milk (or cream mixture) to a microwave-safe mug. Cover loosely and microwave for 2–3 minutes until the broccoli is tender.
- Stir in the cream cheese, garlic powder, salt, and pepper until smooth and creamy.
- Add the shredded cheddar cheese and stir well. Microwave for another 30–45 seconds, then mix again until fully melted and combined.
- Top with extra cheddar cheese and enjoy warm straight from the mug!
Notes
For a chunkier soup, add cooked chicken bits or crispy bacon. You can also puree the soup with an immersion blender for a smoother texture.
