  • 1/2 cup broccoli florets chopped and lightly steamed
  • 1/3 cup shredded cheddar cheese
  • 1 tbsp butter or olive oil for cooking
  • 1 tbsp heavy cream or milk optional, for fluffiness
  • salt and pepper to taste

Method
 

  1. In a bowl, whisk together eggs, heavy cream (if using), salt, and pepper until smooth and slightly frothy.
  2. Heat butter or olive oil in a non-stick skillet over medium heat. Add chopped broccoli and sauté for 2–3 minutes until warmed through.
  3. Pour in the egg mixture and let it sit for a few seconds, then gently stir with a spatula, pushing the eggs from the edges toward the center.
  4. When eggs are nearly set, sprinkle shredded cheddar cheese over the top and continue cooking until melted and creamy.
  5. Serve warm, topped with a little extra cheese or chopped herbs if desired.

Notes

This scramble works great with other veggies too — try adding mushrooms, spinach, or bell peppers for extra flavor and color.
