- In a bowl, whisk together eggs, heavy cream (if using), salt, and pepper until smooth and slightly frothy.
- Heat butter or olive oil in a non-stick skillet over medium heat. Add chopped broccoli and sauté for 2–3 minutes until warmed through.
- Pour in the egg mixture and let it sit for a few seconds, then gently stir with a spatula, pushing the eggs from the edges toward the center.
- When eggs are nearly set, sprinkle shredded cheddar cheese over the top and continue cooking until melted and creamy.
- Serve warm, topped with a little extra cheese or chopped herbs if desired.
Notes
This scramble works great with other veggies too — try adding mushrooms, spinach, or bell peppers for extra flavor and color.
