
Cauliflower Fried ‘Rice’ with Shrimp
A low-carb, keto-friendly take on fried rice, made with cauliflower rice, juicy shrimp, and Asian-inspired flavors.

- Heat 1 tbsp sesame oil in a wok or skillet. Add shrimp, season lightly, and cook 2-3 minutes per side until pink. Remove and set aside.
- In the same skillet, add beaten eggs and scramble until set. Remove and set aside with shrimp.
- Add remaining sesame oil, garlic, and mixed vegetables to the skillet. Sauté for 2-3 minutes.
- Stir in cauliflower rice and cook 5-6 minutes until tender.
- Return shrimp and scrambled eggs to the pan, pour in soy sauce, and stir well to combine.
- Top with green onions and serve hot.
Notes
For a spicier version, add chili flakes or sriracha. You can also substitute chicken or beef for shrimp.
