Cauliflower Fried ‘Rice’ with Shrimp

Ingredients
  

Main Ingredients
  • 1 lb shrimp peeled and deveined
  • 4 cups cauliflower rice fresh or frozen
  • 2 tbsp sesame oil divided
  • 2 eggs lightly beaten
  • 1 cup mixed vegetables peas, carrots, or low-carb mix
  • 3 cloves garlic minced
  • 3 tbsp soy sauce or coconut aminos to taste
  • 2 tbsp green onions sliced, for garnish

  • Wok or Large Skillet
  • Spatula

Method
 

  1. Heat 1 tbsp sesame oil in a wok or skillet. Add shrimp, season lightly, and cook 2-3 minutes per side until pink. Remove and set aside.
  2. In the same skillet, add beaten eggs and scramble until set. Remove and set aside with shrimp.
  3. Add remaining sesame oil, garlic, and mixed vegetables to the skillet. Sauté for 2-3 minutes.
  4. Stir in cauliflower rice and cook 5-6 minutes until tender.
  5. Return shrimp and scrambled eggs to the pan, pour in soy sauce, and stir well to combine.
  6. Top with green onions and serve hot.

Notes

For a spicier version, add chili flakes or sriracha. You can also substitute chicken or beef for shrimp.
