- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Add the cod fillets and sear for 3–4 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same skillet, lower the heat to medium. Add butter and minced garlic, sautéing until fragrant (about 30 seconds).
- Stir in lemon juice and swirl the sauce gently. Return the cod fillets to the pan and spoon the garlic butter over the top.
- Garnish with chopped parsley and serve immediately with a wedge of lemon.
Notes
Serve this buttery cod with cauliflower mash, sautéed spinach, or zucchini noodles for a complete low-carb meal. You can substitute cod with haddock or halibut if preferred.
