Main Ingredients
  • 2 fillets cod about 6 oz each, skinless and boneless
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
Garlic Butter Sauce
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp chopped parsley for garnish

Method
 

  1. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add the cod fillets and sear for 3–4 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, lower the heat to medium. Add butter and minced garlic, sautéing until fragrant (about 30 seconds).
  4. Stir in lemon juice and swirl the sauce gently. Return the cod fillets to the pan and spoon the garlic butter over the top.
  5. Garnish with chopped parsley and serve immediately with a wedge of lemon.

Notes

Serve this buttery cod with cauliflower mash, sautéed spinach, or zucchini noodles for a complete low-carb meal. You can substitute cod with haddock or halibut if preferred.
