Notes
Spinach Feta Breakfast Roll-Ups are one of my favorite recipes to prepare when I want something quick, satisfying, and still nutritious in the morning. The combination of creamy feta, tender eggs, and vibrant spinach wrapped in buttery crescent dough makes them irresistible. They’re perfect for meal prep — you can bake a batch on Sunday and have grab-and-go breakfasts ready for the week. If you’d like extra protein, you can add a few crumbles of cooked sausage, ham, or even smoked salmon to the filling. For a lighter version, swap crescent dough with whole-wheat tortillas and bake them pinwheel-style. These roll-ups aren’t just limited to breakfast; they make an excellent brunch appetizer or a savory snack for family gatherings. My tip: brush the tops with a little melted butter before baking to get that golden, glossy finish that makes them look bakery-perfect. Once you try these, you’ll find yourself making them on repeat — they’re that good!
