- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix softened cream cheese and shredded cheddar until smooth.
- Stuff each jalapeño half with the cheese mixture.
- Wrap each stuffed jalapeño with a half or full slice of bacon, securing with a toothpick if necessary.
- Brush the bacon with melted butter mixed with smoked paprika for extra flavor.
- Bake for 18–20 minutes, or until bacon is crispy and cheese is melted. Serve warm.
Notes
Make ahead: prepare jalapeños and refrigerate for up to 4 hours before baking. For extra spice, add a pinch of cayenne to the cheese filling.
