  • 12 mini jalapeños halved and seeded
  • 4 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 12 slices bacon cut in half if needed
  • 1 tbsp unsalted butter melted
  • 1/2 tsp smoked paprika

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix softened cream cheese and shredded cheddar until smooth.
  3. Stuff each jalapeño half with the cheese mixture.
  4. Wrap each stuffed jalapeño with a half or full slice of bacon, securing with a toothpick if necessary.
  5. Brush the bacon with melted butter mixed with smoked paprika for extra flavor.
  6. Bake for 18–20 minutes, or until bacon is crispy and cheese is melted. Serve warm.

Notes

Make ahead: prepare jalapeños and refrigerate for up to 4 hours before baking. For extra spice, add a pinch of cayenne to the cheese filling.
