  • 1 lb ground beef lean or regular
  • 4 cups shredded green cabbage about half a medium head
  • 1 cup shredded carrots optional
  • 3 cloves garlic minced
  • 2 tbsp soy sauce or coconut aminos
  • 1 tbsp sesame oil
  • 1 tbsp olive oil or avocado oil for cooking
  • 1/2 tsp ground ginger or fresh grated ginger
  • salt and pepper to taste
  • green onions and sesame seeds for garnish (optional)

Method
 

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  2. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  3. Add the shredded cabbage and carrots. Stir fry for 5–7 minutes, until the vegetables are tender but still slightly crisp.
  4. Pour in soy sauce and sesame oil, tossing everything together until well coated. Season with salt and pepper to taste.
  5. Remove from heat and garnish with green onions and sesame seeds before serving.

Notes

For extra heat, add a dash of chili flakes or sriracha. This dish also works great with ground turkey or chicken for a lighter version.
