Ingredients
  

Chia Pudding Base
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tbsp honey or low-carb sweetener to taste
Layers
  • 1 cup vanilla Greek yogurt (or coconut yogurt)
  • 1/2 cup fresh berries blueberries, strawberries, or raspberries
  • 2 tbsp granola or chopped nuts optional, for crunch

Method
 

  1. In a mixing bowl, whisk together chia seeds, almond milk, vanilla extract, and sweetener. Cover and refrigerate for at least 2 hours or overnight until thickened.
  2. Stir the chia pudding before using to ensure even texture.
  3. In serving glasses or jars, layer chia pudding, vanilla yogurt, and fresh berries.
  4. Top with granola or nuts if desired. Serve immediately or keep chilled until ready to eat.

Notes

For a dairy-free option, use coconut or almond yogurt. You can also prep several parfaits ahead for quick grab-and-go breakfasts.
