  • 1-2 tbsp erythritol or preferred sweetener to taste

Method
 

  1. Preheat waffle iron according to manufacturer’s instructions.

  3. In another bowl, beat eggs, almond milk, melted coconut oil, vanilla extract, and sweetener until smooth.
  4. Combine wet and dry ingredients, mixing until a thick batter forms.
  5. Grease the waffle iron, pour batter, and cook until golden and crisp (about 4–5 minutes per waffle).
  6. Serve warm with sugar-free syrup or fresh berries.

Notes

These waffles freeze well! Let them cool, then store in a freezer-safe bag. Toast to reheat for a quick breakfast.
