Method
- Place shredded coconut, almond flour, sweetener, lime zest, and vanilla extract into a food processor. Pulse until evenly combined.
- Add melted coconut oil and lime juice. Process again until the mixture starts to stick together like dough.
- Use your hands to form small bite-sized balls. Roll each one in extra shredded coconut for a finishing touch.
- Place on a plate or baking sheet and refrigerate for 20–30 minutes until firm.
- Store in an airtight container in the fridge for up to a week.
Notes
For an extra tropical twist, add a few drops of coconut extract or roll the balls in finely chopped macadamia nuts.
