Ingredients
  

Chicken
  • 2 pieces boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Salad Base
  • 4 cups romaine lettuce chopped
  • 1/4 cup parmesan cheese shaved or grated
  • 1/2 cup cherry tomatoes halved
Dressing
  • 1/3 cup mayonnaise
  • 2 tbsp lemon juice freshly squeezed
  • 2 tsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 1 clove garlic minced

Method
 

  1. Season chicken breasts with olive oil, salt, and pepper. Grill or cook in a skillet over medium heat for 6–8 minutes per side, until fully cooked.
  2. Let chicken rest for 5 minutes, then slice thinly.
  3. In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, and garlic to make the dressing.
  4. Assemble salad bowls with romaine, cherry tomatoes, and parmesan. Top with sliced chicken and drizzle with Caesar dressing.
  5. Toss gently before serving and enjoy.

Notes

For extra crunch, add keto-friendly croutons made from baked cheese crisps. You can also swap chicken for shrimp or salmon.
