Ingredients
  

Chicken & Filling
  • 4 pieces chicken breasts boneless, skinless
  • 2 cups fresh spinach roughly chopped
  • 4 oz cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1/2 tsp paprika for color and flavor
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic and spinach until wilted. Remove from heat.
  3. In a bowl, mix cooked spinach, cream cheese, mozzarella, and Parmesan until creamy.
  4. Cut a pocket into each chicken breast and stuff with the spinach mixture. Secure with toothpicks.
  5. Season the outside of the chicken with salt, pepper, and paprika.
  6. Heat the skillet again, sear chicken on both sides for 2–3 minutes until golden, then transfer to the oven.
  7. Bake for 15–20 minutes, or until chicken is fully cooked (internal temp 165°F).
  8. Let rest 5 minutes before slicing. Serve warm with roasted veggies or cauliflower mash.

Notes

Add crushed red pepper for spice or sun-dried tomatoes for a tangy twist. Great for meal prep—store in the fridge for up to 3 days.
