Method
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic and spinach until wilted. Remove from heat.
- In a bowl, mix cooked spinach, cream cheese, mozzarella, and Parmesan until creamy.
- Cut a pocket into each chicken breast and stuff with the spinach mixture. Secure with toothpicks.
- Season the outside of the chicken with salt, pepper, and paprika.
- Heat the skillet again, sear chicken on both sides for 2–3 minutes until golden, then transfer to the oven.
- Bake for 15–20 minutes, or until chicken is fully cooked (internal temp 165°F).
- Let rest 5 minutes before slicing. Serve warm with roasted veggies or cauliflower mash.
Notes
Add crushed red pepper for spice or sun-dried tomatoes for a tangy twist. Great for meal prep—store in the fridge for up to 3 days.
