Method
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the eggs. In one bowl, beat the egg whites and cream of tartar until stiff peaks form.
- In another bowl, mix egg yolks, cream cheese, salt, and pepper until smooth.
- Gently fold the whipped egg whites into the yolk mixture, being careful not to deflate the batter.
- Spoon the mixture into 4–6 rounds on the prepared baking sheet and bake for 25 minutes, or until golden and set. Let cool.
- Assemble the sandwich by layering ham, cheese, and optional spreads between two pieces of cloud bread. Toast or heat if desired before serving.

Notes
You can make extra cloud bread and store it in the fridge for up to 3 days. Try adding herbs or shredded cheese to the batter for extra flavor!
