- Heat olive oil in a large skillet over medium heat. Add sliced Italian sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, sauté onion, bell peppers, and zucchini for 4–5 minutes until softened. Add minced garlic and cook for another 30 seconds.
- Return sausage to the skillet, pour in marinara sauce, and sprinkle with Italian seasoning, salt, and pepper. Stir well to combine and heat through.
- Top with shredded mozzarella cheese, cover the pan, and let it melt for 1–2 minutes.
- Serve hot in bowls and garnish with fresh basil or parsley if desired.
Notes
This dish pairs perfectly with cauliflower rice or a fresh green salad. For extra spice, use hot Italian sausage and add a pinch of red pepper flakes.
