  • 2 links Italian sausage sliced (mild or spicy)
  • 1 tbsp olive oil
  • 1/2 cup chopped bell peppers mix of red and green
  • 1/2 cup sliced zucchini
  • 1/4 cup chopped onion
  • 1 clove garlic minced
  • 1/2 cup low-carb marinara sauce
  • 1/3 cup shredded mozzarella cheese for topping
  • 1/2 tsp Italian seasoning
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add sliced Italian sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same skillet, sauté onion, bell peppers, and zucchini for 4–5 minutes until softened. Add minced garlic and cook for another 30 seconds.
  3. Return sausage to the skillet, pour in marinara sauce, and sprinkle with Italian seasoning, salt, and pepper. Stir well to combine and heat through.
  4. Top with shredded mozzarella cheese, cover the pan, and let it melt for 1–2 minutes.
  5. Serve hot in bowls and garnish with fresh basil or parsley if desired.

Notes

This dish pairs perfectly with cauliflower rice or a fresh green salad. For extra spice, use hot Italian sausage and add a pinch of red pepper flakes.
