Ingredients
  

Mousse
  • 2 medium ripe avocados peeled and pitted
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup erythritol or keto sweetener to taste
  • 1/4 cup unsweetened almond milk or coconut milk
  • 1 tsp vanilla extract
  • 1 pinch salt
Optional Toppings
  • sugar-free whipped cream
  • shaved dark chocolate (90%)
  • fresh raspberries

Equipment

Method
 

  1. Place avocados, cocoa powder, sweetener, almond milk, vanilla extract, and a pinch of salt into a blender or food processor.
  2. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. Taste and adjust sweetness if necessary.
  4. Transfer mousse into serving glasses or bowls. Chill for at least 30 minutes before serving.
  5. Top with sugar-free whipped cream, shaved dark chocolate, or fresh raspberries if desired.

Notes

This mousse can be made a day in advance and stored in the fridge. For a richer flavor, add a tablespoon of nut butter or espresso powder.
