Ingredients
  

Chicken Base
  • 2 lb chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
Topping Mixture
  • 8 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 4 slices bacon cooked and crumbled
  • 3 jalapeños sliced, seeds removed if less heat desired
  • 1/2 tsp garlic powder

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Place chicken breasts in the baking dish. Drizzle with olive oil and season with salt and pepper.
  3. In a mixing bowl, combine cream cheese, garlic powder, half of the shredded cheddar, and half of the crumbled bacon.
  4. Spread cream cheese mixture evenly over the chicken breasts.
  5. Top with jalapeño slices, remaining cheddar cheese, and the rest of the bacon crumbles.
  6. Bake uncovered for 30–35 minutes, or until chicken is cooked through (internal temp 165°F / 74°C).
  7. Let rest 5 minutes before serving. Garnish with extra jalapeños if desired.

Notes

This dish pairs perfectly with a side salad or roasted vegetables. Adjust jalapeño quantity depending on your spice preference.
