- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Place chicken breasts in the baking dish. Drizzle with olive oil and season with salt and pepper.
- In a mixing bowl, combine cream cheese, garlic powder, half of the shredded cheddar, and half of the crumbled bacon.
- Spread cream cheese mixture evenly over the chicken breasts.
- Top with jalapeño slices, remaining cheddar cheese, and the rest of the bacon crumbles.
- Bake uncovered for 30–35 minutes, or until chicken is cooked through (internal temp 165°F / 74°C).
- Let rest 5 minutes before serving. Garnish with extra jalapeños if desired.
