Ingredients
  

Fudge Base
  • 1 cup natural peanut butter unsweetened, creamy
  • 1/2 cup coconut oil melted
  • 1/3 cup powdered erythritol or keto sweetener to taste
  • 1 tsp vanilla extract
Optional Toppings
  • sea salt flakes for garnish
  • sugar-free chocolate drizzle optional

Method
 

  1. In a mixing bowl, combine peanut butter, melted coconut oil, sweetener, and vanilla extract. Stir until smooth and well blended.
  2. Pour the mixture into a parchment-lined square baking dish and smooth the top.
  3. Optional: sprinkle with sea salt flakes or drizzle with sugar-free chocolate.
  4. Refrigerate or freeze for at least 2 hours until firm.
  5. Cut into bite-sized squares and store in the refrigerator until ready to enjoy.

Notes

For a firmer fudge, store in the freezer. You can also swirl in sugar-free chocolate or add chopped nuts for crunch.
