Ingredients
  

Chia Pudding Base
  • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk
  • 3/4 cup pumpkin puree unsweetened
  • 2 tbsp erythritol or keto sweetener to taste
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
Optional Toppings
  • whipped cream (sugar-free)
  • toasted pecans

Method
 

  1. In a mixing bowl, whisk together almond milk, pumpkin puree, sweetener, pumpkin pie spice, and vanilla extract until smooth.
  2. Add chia seeds and whisk well to combine.
  3. Cover and refrigerate for at least 4 hours or overnight until thickened.
  4. Stir before serving and top with whipped cream and toasted pecans if desired.

Notes

This pudding can be prepped ahead for meal prep. Store in jars for an easy grab-and-go breakfast throughout the week.
