Ingredients
  

Filling
  • 1 lb ground beef or ground turkey
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
Assembly
  • 8 leaves romaine or butter lettuce washed and separated
  • 1/2 avocado sliced
  • sour cream or Greek yogurt optional, for topping
  • fresh cilantro optional, for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
  2. Add chili powder, cumin, salt, pepper, diced tomatoes, and onions. Cook for 5 minutes until vegetables are tender.
  3. Place lettuce leaves on a serving plate. Spoon the taco mixture into each leaf.
  4. Top with avocado slices, sour cream or Greek yogurt, and fresh cilantro if desired. Serve immediately.

Notes

You can add shredded cheese or diced jalapeƱos for extra flavor. For meal prep, keep lettuce separate until ready to serve.
