Ingredients
  

Stuffed Peppers
  • 2 large bell peppers halved and seeded
  • 8 oz raw shrimp peeled and deveined, chopped
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/4 cup cream cheese softened
  • 1/4 cup shredded mozzarella cheese
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper adjust to taste
  • salt and black pepper to taste
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Place halved bell peppers cut-side up in a baking dish.
  2. In a skillet, heat olive oil over medium heat. Add garlic and shrimp, cook for 3–4 minutes until shrimp turn pink. Remove from heat.
  3. In a bowl, combine cooked shrimp, cream cheese, mozzarella, smoked paprika, cayenne, salt, and pepper. Mix until creamy and well combined.
  4. Spoon the shrimp mixture evenly into the pepper halves. Top with a little extra mozzarella if desired.
  5. Bake for 20–25 minutes or until the peppers are tender and the filling is golden and bubbly.
  6. Garnish with chopped parsley and serve hot.

Notes

For extra flavor, squeeze fresh lime juice over the baked peppers before serving. You can also swap mozzarella for pepper jack for an even spicier kick.
