Ingredients
  

Filling
  • 1 tbsp olive oil
  • 2 cups fresh spinach chopped
  • 2 large eggs lightly beaten
  • 1/2 cup crumbled feta cheese
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease or line a baking sheet with parchment paper.
  2. In a skillet over medium heat, warm the olive oil. Add spinach and cook until wilted, about 2 minutes.
  3. Stir in beaten eggs and cook gently, scrambling until just set. Remove from heat and fold in feta cheese and black pepper.
  4. Unroll the crescent dough and separate into triangles. Spoon spinach-feta mixture onto each triangle and roll tightly from the wide end to the tip.
  5. Place roll-ups on the prepared baking sheet and bake 15–20 minutes, until golden brown. Serve warm.
