Ingredients
  

Salad
  • 2 medium zucchini spiralized into noodles
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup Kalamata olives pitted and halved
  • 1/3 cup feta cheese crumbled
Dressing
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 clove garlic minced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

  1. Spiralize zucchini into noodles and place in a large mixing bowl.
  2. Add cherry tomatoes, cucumber, red onion, olives, and feta cheese to the bowl.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and black pepper.
  4. Pour dressing over salad ingredients and toss gently to combine.
  5. Serve immediately as a refreshing side or light main dish.

Notes

This salad is best served fresh. If preparing ahead, store dressing separately and toss before serving.
